Description
These delicious Raspberry Bounty Bars, featuring a sweet raspberry chia layer atop a rich coconut base, all coated in dark chocolate. Perfect as a refreshing and healthy treat!
Ingredients
100g desiccated coconut
75g coconut cream
2tbsp maple syrup
2tbsp coconut oil
1/2tsp vanilla extract
pinch of salt
For the raspberry chia layer
200g raspberries
1 1/2tbsp maple syrup
1/2tbsp lemon juice
2tbsp chia seeds
For the chocolate coating
150g cocoa drops

Make the raspberry chia layerPlace the raspberries, maple syrup, and lemon juice in a small saucepan. Cook over medium heat while smashing the raspberries with the back of a wooden spoon. Once you have a sauce-like consistency, remove from heat and mix in the chia seeds. Set aside and let cool completely.

Make the Coconut LayerAdd all the ingredients for the coconut layer to a food processor and blend until the mixture starts to come together. Press the mixture into a silicone mold and top with the cooled raspberry chia mixture. Place in the freezer for a few hours until firm enough to cut into bars or squares.

Coat with Dark ChocolateDip the bars into the melted dark chocolate, or place each bar on a fork and drizzle the chocolate over and down the sides to coat. Place the bars back in the freezer for 5-10 minutes until the chocolate is set.
