

Delicious and simple! These homemade cookie ice cream sandwiches are perfect for hot summer days or cozy nights in. Soft, chewy cookies filled with creamy ice cream create a treat that’s easy to make and hard to resist. Customise with your favourite flavours!
Beat the butter, brown sugar, and granulated sugar together in a large bowl on medium-high speed until combined and creamy, then add the egg.
Mix the flour, cornstarch, baking soda, and salt together in a medium bowl.
Gradually add the butter mixture to the dry ingredients. Then beat on medium-high speed until combined.
Stir in the chocolate drops with a spatula.
Using an ice cream scoop, scoop out balls of dough and shape them into beautiful round balls. Place the dough balls on a baking tray lined with baking paper. And put them in the fridge for at least an hour.
Preheat the oven to 180°C. Remove the dough balls from the refrigerator and place them in the oven. Bake for 15 to 20 minutes, or until the edges are golden brown.
Allow the cookies to cool on a wire rack.
Once the cookies have cooled, scoop the ice cream onto the bottom of one cookie.
Top with another cookie to make a sandwich. Gently press the cookies together so the ice cream is even along the edges of the cookies.
